Tasty Syrupy KoekSisters, are crunchy on the outside and soft and melting on the inside, drenched in sugar syrup.
6 Cups of white sugar (6x250 ml)
3 Cups of water (3 x 250 ml)
2ml of Cream of Tartar
4 cinnamon sticks
4 Cups of flour
3 tsp of baking powder (15ml)
1/2 tsp of salt
2 Tbsp of butter (30 ml)
1 Tbsp of sugar (15 ml )
1 Cup Water (250 ml)
oil for frying.(deep fry)
First make the syrup (the syrup must be chilled in the fridge before you make the koeksister)
How to make the syrup.
Boil al the syrup ingredients together, stirring now and again in the beginning. Until all the sugar has been dissolved. Boil for 15 minutes. Then cool before chilling in the refrigerator.
Make the koeksisters.
Sift the flour baking powder and the salt.
Rub in the butter.
Beat the eggs sugar and the water together.
Add this to the flour mixture and knead together very well until smooth and shiny. Allow to rest in the fridge for a few hours.
Then roll out dough thinly and cut into strips and make them about 3-4 inches long and plait.
Heat the oil and fry the koeksister in deep oil turning when brown. Then plunge them in cold syrup.
The hot koeksister will such up the syrup. Then lay them in a dish to cool.
Then place them in a refrigerator to cool.
Serve them on plates and enjoy the syrupy koeksister.
Make these ingredients a day before or a good few hours before frying the koeksisters. The time allowed to prepare the syrup and let dough chill for recipe is not included in the preparation or cooking time.
